Brewing - 'Sayangju'
Our ancestors refined their liquor by fermenting rice again in liquor that was still undergoing fermentation, a process known as "secondary fermentation," which, when repeated three times, produces Sayangju.
MiJu undergoes meticulous and intricate fermentation processes four times before being released.
How to drink
Store MiJu upright in the refrigerator (Temperature between 0°C and 3°C). When serving, enjoy MiJu chilled at a temperature between 7°C and 9°C, similar to the temperature at
which champagne is served. Stored MiJu separates into clear top layer and cloudy bottom layer.
First, enjoy the clear top layer of the drink by pouring it into your glass without shaking.
After drinking down to the label level, shake the bottle and enjoy again.
Tasting Note
The crisp top layer exudes the fragrance of winter jasper, autumn pear, summer melon, and faint wildflower scent, complemented by subtle sweetness and refined acidity, akin to white wine. The rich bottom layer, resembling milky rice water, showcases a dense texture with intensified flavors of vanilla, tropical bananas, and ripe melon, along with a robust sweetness and pronounced acidity, ideal for pairing with food.
